Find me one person who doesn't like potatoes. There are endless scrumptious possibilities with this comfort food. Fun fact. Nearly half your daily value of Vitamic C is from potatoes apart from fiber, magnesium and antioxidants

Take 1 kg potatoes, cut them into half & keep it to boil until 4 whistles in a cooker

Once the cooker cools down, scoop out the potatoes with a spoon keeping the skin & the outer cover intact

Take the mashed potatoes, add chopped onions, capsicum, salt, pepper, mixed herbs, chilli flakes & mix them well

Stuff the mixture in the potato buckets & sprinkle grated cheese on top

Take a saucepan, grease it with butter/ oil/ ghee & place the potato buckets neatly & cover it well for 5 mins.

Potato buckets are ready to serve. You can additionally sprinkle salt & pepper as per your taste requirements. Serve hot
