Boil the chicken breast with salt and a garlic clove. Once cooked, shred it and set aside.

Wash the tomatillos and boil them with a little water for 10 minutes.

After the tomatillos are cooked, blend them with cilantro, half an onion, a quarter cup of sour cream, half a block of cream cheese, and salt. If you want your sauce to be a bit spicy, you can add the 2 raw serrano peppers. Set aside.

In a skillet, fry the tortillas until they are soft, then place the chicken in the middle and fold them.

In a baking dish, add some of the sauce and a layer of enchiladas, then cover with more sauce. Top with Oaxaca cheese and Manchego cheese.

You can bake it to melt the cheeses, or as I did, use a double boiler 🤪. You can also heat the sauce, prepare the tortillas, place them on a plate, cover them with sauce, and add cheese, sour cream, and Oaxaca cheese, and you're done ☺️✨👌🏻.
