Couscous (Arabic: كُسْكُس kuskus Berber languages seksu) is a Maghrebi dish of small steamed balls of crushed durum wheat semolina that is traditionally served with a stew spooned on top. Pearl millet and sorghum especially in the Sahel and other cereals can be cooked in a similar way and the resulting dishes are also sometimes called couscous.

In a large bowl whisk the salt, black pepper, grated garlic, lemon juice and olive oil with the boiling water.

Pour over the dried cous cous and. Cover with the plate and leave to stand for 15 minutes. Once soaked and cooled slightly, fluff up the grains with a fork.

Add the chickpeas, grated carrot, cucumber,pomegranate and fresh parsley give everything a good stir and serve.
