Preheat oven to 350F

Line a deep cake pan with melted butter. Sprinkle brown sugar and line with pineapple slices.

Beat butter and sugar till creamy and well combined.

Add eggs one at a time. Stir in essence

In another bowl, sift flour, baking powder and salt.

Mix wet ingredients and flour alternating with milk. Starting and ending with flour.

Pour batter evenly over the lined pan with pineapples

Bake for 45mins

Allow to cool for 10-15mins then when invert cake onto a serving platter

Serve warm
