Steps

Preheat oven at 180c. Apply butter in the tin at the bottom and all around.

Sieve or whisk together cinnamon powder, nutmeg powder, cloves powder, wheat flour, salt, soda and baking powder really well.

Combine sugar, oil, eggs, vanilla essence, ginger in another mixing bowl. Whisk till the sugar is mostly dissolved and the mixture looks thick and airy. It will look lighter brown in colour.

Combine wet and dry ingredients together using a rubber spatula. Lightly fold the mixture while combining so the air bubbles do not break.

Add carrot, apple, 3/4 cup walnuts and raisins. Fold and combine everything very well.

Pour the cake mixer till half or 3/4 level of the tin. Garnish with 1/4 cup walnuts. Bake for 30-40 minutes. Check for readiness after 30 minutes.

How to know if it is thoroughly cooked...1. cake must not be wabbly upon shaking 2. prick a knife/toothpick at the centre till the bottom. The knife must come out completely clean. 3. The cake leaves the sides of the pan when ready.

1.Apple can be replaced by pineapple. Drain the liquid if you are using canned apple/pineapple crush. 2. Use freshly grated and fresh carrots as it's the carrots and apples that give moisture to this cake...there is no other wet ingredient apart from eggs and oil. 3. This cake tastes yummm and flavourful as a sponge cake. But it can also be frosted with cream cheese icing.

How to remove cake from the tin... Let the cake rest for about 30-40 min on the counter. Then run a knife around the sides of the cake to thoroughly separate it from the tin. Place the cake upside down in a plate. Tap on the tin all around, shake a bit and the cake will be out. Rest it on a rake till it cools down thoroughly.

It tastes even better after a day as the flavours mingle well as it rests.
