Simmer 1 quart (about 1 liter) of water with 10 1/2 ounces (300 grams) of fresh lotus seeds. Adjust the amount of each ingredient to your preference.

Once the lotus seeds are tender, add the red dates and dried longan. If you prefer more liquid, add more boiling water. Sweeten to taste with brown rock sugar. Simmer a bit longer until the dried longan softens.

You can enjoy this sweet soup hot or cold. For a cold version, use a bit more sugar; for a hot version, use less sugar.
