Ingredients

  • 4 cupsflour (about 500 grams)
  • 1 teaspoonsugar
  • 2 teaspoonsyeast
  • 1/2 teaspoonsalt
  • 3 teaspoonspowdered milk
  • 3 tablespoonsplain yogurt
  • 1/4 cupolive oil (60 ml)
  • 1 cupwater (240 ml)
  • (Filling)
  • 7 ouncesfinely ground beef (about 200 grams)
  • 4medium tomatoes
  • 1large onion
  • 1bell pepper
  • 3 tablespoonsvegetable oil
  • 1 teaspoonsalt
  • 1/2 teaspooneach cinnamon, black pepper, allspice

    Place the flour in a large mixing bowl. Add all the dough ingredients and knead together for about 10 minutes. Cover the bowl with plastic wrap and a towel, then let it rise in a warm place for 1 hour until the dough doubles in size.

    Peel and finely chop the onion. Wash the bell pepper and tomatoes. Finely chop the bell pepper. Peel the tomatoes and remove the seeds if needed, then finely chop them.

    Place the chopped vegetables in a bowl. Add the remaining filling ingredients and mix well. Add the ground beef and mix again. Cover and refrigerate the filling while the dough rises.

    Lightly flour your work surface. Roll out the dough and sprinkle a little flour on top. Roll it into one large round. Cut out circles using a biscuit cutter, glass, or any round cutter to your preferred size. Take each dough circle, flip it over, and place about 1 teaspoon or less of filling in the center. Pinch the dough from four sides to seal, then place on a baking tray dusted with a little flour. Repeat with the remaining dough, re-rolling scraps as needed until all the dough is used (enough for one large or two small trays).

    Preheat a stovetop burner to medium heat. Place the trays on the burner until the bottoms are golden. Then turn on the oven broiler and place the trays under the broiler until the tops are golden brown.

    Separate the pieces with a knife or by hand. Serve hot with yogurt or fresh vegetables. Enjoy!
