Schezaam chicken /Szechuan chicken is a chinese chicken appetizer.Thid is done by crossing fried chicken pieces in spicy,tangy gravy.This is a hot spicy dish served with noodles,fried rice or simple boiled rice.

Schezaam chicken /Szechuan chicken is a chinese chicken appetizer.Thid is done by crossing fried chicken pieces in spicy,tangy gravy.This is a hot spicy dish served with noodles,fried rice or simple boiled rice.
Steps

First marinate the chicken pieces with salt and ingredients under list of marination and cover with aluminium foil and refrigerate for half to 1 hour.

Then take them and fry them in oil at medium flame and keep aside.

From this take 1tbsp oil in a pan.Slow down flame add ginger and garlic paste.Saute till raw taste goes.Dont brown them.

Then add green chilli,whole red chilli,chilli paste(soak kashmiri chilli deseeded in hot water for half hour grind this chilli using 1 tsp vinegar and 1tsp water if required) and sugar.

Then add chicken pieces and coat them.Then add soya sauce,ketchup, stock and colour.

Then coat chicken pieces and and reduce gravy. Add salt if required.Serve this with boiled rice.Garnish with spring onion.
