In a wok add 2 tbps cooking oil and add peanuts,urad dal and Chironji and almonds. Saute it for 1 minute at low flame.

Now add chopped carrot and saute for 1 minutes. Then add sliced onion and saute for another 1 minute at medium flame.

Now add chopped capsicum and saute for 1 more minute at medium flame.

Now add roasted vermicelli and add water. Cook it for 7-8 at medium flame.

Once water is soaked completely, vermicelli upma is ready to serve. Garnish it with fresh coriander leaves.
