Steps
- 1
Spread the cashews out and let them dry in the sun for 2 hours to remove any odor.
- 2
Grind the cashews in a blender to make a fine powder. Sift the powder through a sieve to get a smooth texture.
- 3
In a pan, heat the water and add the sugar. You don't need to make a syrup with threads—just dissolve the sugar. Add the cashew powder and mix well. Add 1/2 teaspoon ghee and cook over medium heat, stirring for about 5 minutes, until the mixture thickens and leaves the sides of the pan.
- 4
Transfer the mixture onto parchment paper. Once it cools slightly, roll it out with a rolling pin. If you don't have parchment paper, grease a plastic sheet with a little ghee and spread the mixture on it. Roll it out thinly with a rolling pin. If you like, you can add edible silver leaf on top. Cut into your favorite shapes.
- 5
Your delicious, sweet Kaju Katli is ready to serve.
