Cooking Instructions

In a large bowl whisk together eggs, milk, salt, pepper, crushed red pepper, mined onions and chopped spinach......

Spray a muffin pan with butter cooking spray....

Carefully pour egg mixture into muffin cups, being careful not to overfill each muffin cup......

Bake in a preheated 350 degree oven for 20 - 25 minutes, or until center of egg muffins are set.....

Let cool for 10 minutes, then remove egg muffins, serve and enjoy 😉! At this point you can top off each egg muffin with your favorite condiments, like ketchup, mustard, or maybe mayonnaise! 🥰

My daughter baked these tasty muffins using a recipe from a cookbook she gave me. They were tasty, so I simplified the procedure.The key is not to over mix in Step 3. Use a spoon to fold it in, stopping after the dry ingredients are incorporated.
