This is a wintry delicacy begging for more. It is best served with custard, cream or ice cream.

Preheat oven to 180’C.

Mix sugar, butter, salt, bicarbonate of soda and baking powder until smooth. Add eggs and mix through.

Sieve plain flour and add to pudding mixture.

Chop all the fruit into chunks and pour into rectangular dish. Add water to the jam and mix well. Pour over the fruit. Pour the pudding mixture over the fruit.

Bake for 45 minutes and serve with the fruit on the top. Enjoy.
