Ingredients

  • Beef/Potato filling
  • 1 lbground beef
  • 2medium potatoes
  • 2.5 tspsalt
  • 2 tspgarlic powder
  • 2 tspcumin
  • to taste Sprinkle chili powder and pepper
  • 1small tomato
  • 1red bell pepper
  • 1/3 cupcilantro
  • Cheese bread
  • 1 cupgrated cotija cheese
  • 1 cuptapioca flour
  • 3 tbspcorn flour
  • 2 tbspcorn starch
  • 1 tbspbaking powder
  • 1large egg
  • 10 tbspmilk

Steps

  1. 1

    Season meat with all seasoning and mix with potatoes

  2. 2

    Cook in covered pan until potatoes are cook through (soft enough to smush)

  3. 3

    Mix egg and milk in bowl until well combined

  4. 4

    Mix dry ingredients in separate bowl with cheese, then mix in wet mix. You can use another type of cheese just make sure to run through food processor first, so the cheese mixes better.

  5. 5

    Grab ball of mix and flatten into a circle, then scoop in spoonful. Pinch in all ends together and smooth

  6. 6

    Preheat oven to 425

  7. 7

    Bake stuffed dough for 20 minutes. Should be lightly browned on top
