Steps

Take 2 big Egg plant... Apply oil... And put cut marks and add garlic... Roast on gas until soft

Now let it cool and deskin it and smashed it properly

Now take a pan put oil... Jeera hing curry patta...then add ginger garlic paste and mix well

Now add finely chopped onions... Spring onion... Salt to taste... Then add tomatoes and cook till pan leaves oil

Now add spices... Turmeric powder.. Chilli powder. Dhanya jeera powder. Garam masala... Mix well... Till fried properly

Now add smashed eggplant with caps it taste much better and mix well... Cook until pan leaves oil

Your Baingan ka bharta is ready to serve... Garnish with coriander and green onions and serve hot
