Ingredients

4 servings
  • 1 tablespoonolive oil
  • 1onion, diced
  • 1 tablespoonsfresh grated ginger root
  • 1garlic clove, minced
  • 1 kgcarrots, peeled and sliced
  • 1 litrevegetable stock
  • salt and pepper, for seasoning

Steps

  1. 1

    Place the olive oil in a large saucepan over a medium heat
    Add in the onion, garlic and ginger
    Saute for 5 minutes

  2. 2

    Add in the sliced carrots and vegetable stock
    Bring to boil and simmer for 20 minutes or until the carrots are tender

  3. 3

    Season with salt and pepper
    Blend until smooth
