Pork & Ginger Steamed Dumplings

I’m documenting this recipe as part of the cooking techniques challenge, however I didn’t get it quite right. I think I wrapped them too thickly because the wrappers became quite thickly gelatinous after steaming. I used rice paper as I needed them to be gluten free, but perhaps it was the wrong choice? 🤔 The filling was delicious and we ate them anyway! If anyone has any advice on what I could have done better, I’d be keen to hear it please 🙏

Mix all of the ingredients (except the pancakes) together in a large bowl. Put it back in the fridge for an hour.

Fill a large bowl with hot water, not boiling as you need to put your hands in!

Lay a clean tea towel in the work surface. Then take your first pancake and dip it in the hot water until it is soft and pliable (takes about 30 seconds to a minute).

Carefully spread the soft rice paper in your tea towel. Put a ball of pork in the centre of the rice paper. Roll carefully as shown in the video.

Place the roll on a lightly oiled plate and repeat until you’ve used all your pork.

Steam for 15 mins then serve with a garlic and soy dipping sauce.

• Your rice sheet might be too big therefore you over fold them.
• They are ready made and dry out quickly, once steamed it will hydrated the rice paper even more. It might help moisture the rice paper by lightly brush the vegetable oil before you steam
• It might be wrong type of wrap. You can make your own gluten free wrappers I have recipe on my Har gow recipe 🥰 1 cup of rice flour, 1/4 cup corn flour, pinch of salt and 1 cup of water. Mix them all up and form them into ball (same way as making dumpling wrappers) 🥰x x x
