To make Potato chips with New potatoes in the winter especially around this time of the year in Christmas and New Year was like a ritual when we were kids when there was no readily available potato chips like Lay, Uncle chips etc ...used to help granny and mom in leisure time and learn at the same time. The taste of Homemade chips is simply different from the commercial ones. What do you say ?
The cooking time is the approx. time required to fry the potato slices made out of 1 kg Potatoes. Take big size potato because as it fries it reduces / shrinks in size. Don't slice it too thick or thin ...my slicer has the fixed appropriate thickness....I miss the old wooden slicer!!!
I love to sprinkle Black Rock salt and black pepper powder only , you can use any of your favourite seasoning !!!

Ingredients

approx 2:30 hrs
7-8 servings
  • 1 kgPotato (Big size New potato)
  • 1 litre Veg oil to deep fry
  • For seasoning
  • to tasteBlack Rock salt
  • 1 tspBlack pepper powder

Steps

approx 2:30 hrs
  1. 1

    Thoroughly wash the potatoes and then peel. Keep the potatoes in room temperature water after peeling. Then slice the potatoes and keep it soaked in room temperature water for 2 hours or till all the slices stiffens up, after rinsing the slices in water once or twice. Once the slices stiffens up, drain the water out and leave it for half an hour to an hour to dry up the excess water.

    Heat enough oil to deep fry the potato slices. Once the oil heats up lower the flame and add in the potato slices in small batches.... fry for about 10 minutes or so or till you see the slices has reduced to 50% in size. Then put the flame on medium flame and fry till the slices turns crispy and becomes golden brown in colour. Be careful not to burn it. Once done keep it on a kitchen tissue paper to absorb the extra oil. Once cooled, sprinkle with black rock salt and black pepper powder. Enjoy!
