Kuroneko-san's Green Tea and Cream Cheese Muffins

The matcha tea specialty cafe in my neighborhood has matcha tea cheese cake. I like it because the matcha tea flavour is so intense. I recreated it in the form of muffins. They're very soft, so they are safe to serve to the elderly members of your family too.

Mix the butter and cream cheese first and then add the sugar and eggs. It will be easier to mix.
If you use the suggested 10 g of matcha tea powder, the muffins will be quite intense and bitter. Try using about half that amount when making these for children. Recipe by Kinakorin

Ingredients

6 servings
  • 120 gramsPlain flour
  • 10 gramsMatcha (powder)
  • 70 gramsCream cheese
  • 80 gramsSugar
  • 50 gramsButter (or margarine)
  • 1Egg
  • 60 mlMilk
  • 1 tspBaking powder

Steps

    Bring the butter and cream cheese to room temperature (You could also soften the butter and cream cheese for 20~30 seconds in a microwave.) Whisk together well. Add the sugar and eggs. Beat well.

    Beat the mixture very well with a whisk. It might be difficult, but be patient! You don't have to be worried about small lumps.

    Measure the dry ingredients (flour, matcha, and baking powder).

    Sift the dry ingredients together into the bowl from Step 1.

    Fold in with a plastic spatula until evenly combined.

    Add milk and mix with a spatula until smooth.

    Divide the batter evenly among the 6 cups in the muffin tin. Preheat the oven to 180ºC. Bake for 30 minutes, and they're done.
