Vegetable Thukpa

Thukpa is a Tibetan noodle soup. There are different kind of thukpa in Tibetan tradition.
It is a popular dish in the region of North India. Indian version of it is different as it has typical Indian spices like chilli powder, garam masala, cumin powder etc. which make this soup spicy and delicious.
It is a soup which can be enjoyed most during cold season. It is a wholesome meal in itself as it has vegetables and noodles. I have also added tofu to complete it by adding some protein. It is a perfect one pot meal which is healthy and flavourful.

First of all boil noodles and rinse it with cold water. Now add some oil to it and mix it nicely so that all the noodles are coated well with oil. Keep it aside until it is ready for use.

Wash all the vegetables and cut them into medium size in the shape of your choice. Slice baby corn thinly so that it can be cooked well.

Heat oil in a pot and add garlic and ginger to it. Saute it until garlic is light pink in colour. Now add onion and cook it for a minute. Now add all other vegetables except spinach and spring onion. Mix everything and cook it on high heat for 5 minutes. Now add tofu to it.

Add soya sauce, chilli sauce, tomato sauce and vegetable stock to the vegetables and mix everything well. Red chilli powder can be added instead of chilli sauce. Now add cumin powder, garam masala, black pepper powder and salt to it and mix everything well.

Now cook the vegetables until done but still crisp. Add spinach to it and cook it on medium heat for a minute. Add spring onion and turn off the heat.

To serve thukpa, first of all add some noodles in a soup bowl and pour prepared soup over it. Serve hot.
