When I was in Italy last, me and my family went to a festival in one of the villages nearby. I had this sliced potatoes stack, on a skewer and fried. They looked delicious and I tried to do the same with our side dish for New Year's day lunch.

When I was in Italy last, me and my family went to a festival in one of the villages nearby. I had this sliced potatoes stack, on a skewer and fried. They looked delicious and I tried to do the same with our side dish for New Year's day lunch.

Peel and slice the potatoes with a mandoline. Do not get rid of the peels, they make a great alternative to chips. Dry the potato slices and add to a bowl.

Melt your butter and add salt, pepper and the herbs. Pour on your potato slices and toss with your hands, making sure these have all been covered nicely. In the process your butter could solidify, but do not worry. Few seconds in the microwave should do the trick.

'Stack' the slices, not to tightly, one after the other following the shape of your chosen oven dish and bake at 200 C for about 50 minutes or until crispy.
