Moist Honey Madelines

I added honey into my original madeline recipe to make it more fluffy and flavorful.
Now this recipe is my family's favorite.
If you are using lemon zest, please wash and wipe the lemons thoroughly.
Please use leftover lemons for cooking.

Baking time and temperature will vary with ovens.
I used to bake at 200°C then lower to 180°C with my previous oven, but if I do the same with my new oven, the cake burns.
Please find the best baking time and temperature with your oven. Recipe by Koharu03

Ingredients

10 servings
  1. 90 gramsButter or margarine
  2. 20 gramsHoney
  3. 2Eggs
  4. 80 gramsSugar
  5. 1lemon Grated lemon peel
  6. 100 gramsFlour
  7. 1 dashless than 1 teaspoon Baking powder

Steps

  1. 1

    Melt the butter and honey in a small pot over low heat. You can use a microwave for this step. Do not forget to put a lid on!

    Break the eggs, add the sugar, and beat them together until thick and smooth. Add the lemon zest and mix.

    Sift the cake flour and baking powder together into the bowl from step 2. Mix gently. Add the honey butter mixture and mix.

    Pour the batter into shell molds or madeline molds, 80% way up.

    Preheat the oven to 180°C and bake for 8 minutes. Lower the oven to 160°C and bake for 4 more minutes. Please see helpful hints.
