There's not a lot that I have to say about poha, other than the fact that it's my all time favorite breakfast dish 😋
It's healthy, it's simple to make, and it is so versatile 🙌🏼
In winters, I like to add carrots, tomatoes, peas and a little grated ginger to my poha, which is what I have done in this recipe ✨

Put oil in a khadai on medium heat and add rai (mustard seeds). Once they crackle, add chopped onion and green chillis.

Cook the onions and chillis on medium heat for 2-3 mins, and then add salt, coriander powder, red chilli powder and turmeric powder. Mix and let the spices cook. Then add tomato, grated ginger, peas (I have used frozen) and cook for 3-4 mins.

Add soaked poha to the khadai and mix well.

Turn the heat off and add juice of 1 small lemon. Make sure you don't cook the lemon juice on heat, or it will give a weird pungent aftertaste.

Add chopped coriander and garnish with fried peanuts and serve hot.

Because I have grown my own coriander, I used the freshest coriander to garnish my poha.
