Shio-Koji Basil Chicken

I made shio-koji. I trying to come up with a dish using that and leftover basil paste, then I arrived to this recipe.
Please adjust the baking time depending on your oven.
Baking with cherry tomatoes and potatoes are also great! (In that case, microwave the potatoes for about 3 minutes in advance). Recipe by uzukaji

Steps
- 1
Poke holes with a fork on the chicken skin. Transfer to a plastic bag. Add the shio-koji, and rub in. Let it sit in the fridge for about 1 hour.
- 2
Line a baking sheet with parchment paper, and open up the Step 1 chicken skin side up. Spread the paste with a spoon.
- 3
Sprinkle with cheese sprinkled on top. Bake in the oven for about 12 minutes at 240℃, and it's done!
