Ingredients

  1. 5large peeled red potatoes, cooked in beef broth until tender and cooled in broth until cool enough to handle or up to two hours. This makes very easy to cube potatoes
  2. 3 tbspflour
  3. 3 tbspbutter
  4. 1 cupchicken stock
  5. 1 cupheavy cream ; you can use whole milk or light cream but heavy cream makes the richest sauce!
  6. 1small onion, finely chopped
  7. 2garlic cloves, minced
  8. 1 tspcajun seasoning
  9. 1/2 tspblack pepper, and salt to taste
  10. 1 tsphot sauce such as franks red hot, or what you like
  11. 1 tsplemon juice
  12. 1/2 cupfresh grated parmesan or romano cheese
  13. 2 tbspchopped parsley for garnish

    Remove cooled potatoes from broth and cut into 1” cubes, set aside while making sauce.

  2. 2

    In a saucepan melt butter, add onion and garlic and cook on low just to soften, do not brown. Whisk in flour and cook on low for 2 minutes, whisk in chicken stock and cream and all seasonings except cheese, stir and simmer until thickened. Add cheese on low to melt, taste to see if salt, pepper or more lemon is needed. Add reserved potatoes and heat through.

    Transfer hot to serving dish. Garnish with parsley

    This can be kept warm over a double boiler for at least an hour.

    So good with all roasted meats, grilled meats and fish!

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
