Healthy Okara Cookies

cookpad.japan @cookpad_jp

I once made okara mochi but cooked them too much... but when I tasted them, they were like cookies!!
From this inspiration I made this recipe. If you have any other great ideas, please let me know.

Try not to burn them by watching their moistness.
To give a nice finish, you can use an oven toaster.
They're soft while warm, but as they cool they harden. Recipe by Yai841

Steps

  1. 1

Mix sugar into the okara. Try to crush any okara grains. Mix in milk (or water) if it's too dry.

  2. 2

Spread it out evenly until it is about 2mm thick. Use your hands if you need to. Make sure it's on the thin side.

  3. 3

I used a refrigerator egg holder and plastic wrap to create the round cookie shapes.

  4. 4

Lay on cooking paper and cook in a 500W microwave for about 2 minutes. Flip over and cook another 2 minutes. (This is for 10 cookies).

  5. 5

When they cool, they'll become crispy and ready to eat. Keep an eye on the cookies and adjust the cooking time according to your microwave. Heat until they are crispy.

  6. 6

In this example, → they got burnt a little from baking too much. Make sure you keep an eye on them while they are baking.

  7. 7

Addendum: If you use moist okara (from a local tofu maker), then you won't need to use milk to get the same results.

  8. 8

Addendum: Cook for 3 minutes in a microwave and then for about 90 seconds in a heated toaster oven until they turn a nice color.
