I'm really into making sweets with ginger these days.
After adding the cake flour, fold the batter with a spatula without kneading.

Place a bowl on a scale, measure in the ginger, honey, and vegetable oil, then mix.

Measure in the cake flour, then fold it into the mixture until well incorporated, wrap in plastic wrap, then roll out.

Preheat oven to 180℃. Roll out wrapped dough to a 3 mm thickness, then cut out the cookies with a cookie cutter.

Bake in preheated oven for 12 to 15 minutes, then they are ready to serve. Feel free to add sesame seeds to the batter for added flavor and texture.
