Ingredients

8 servings
  1. 1.5 cupsPlain gluten free flour
  2. 1egg
  3. 2 Tablespoonscold filtered water
  4. 1/2 cupNuttalex Olive oil spread
  5. 1 cupberries (mixed)
  6. 1 Tablespoonmilk (for wash)
  7. 1 Teaspoonraw sugar (optional)
  8. 1 TeaspoonTapioca flour

Cooking Instructions

    Remove berries from the freezer, (if using frozen berries). In a food processor add flour, spread, blitz, to a bread crumb consistency, add in egg. It will form into a ball of dough. If not, add a very tiny amount of water (a little at a time) and keep adding until a ball is made of dough.

    Place dough in the fridge for 30 minutes. Once done, place between two sheets of baking paper. Roll out to a 1/2 cm circle (you can use other shapes).

    Combine berry mixture with tapioca flour. Set aside. Preheat oven to 180° celcius.

    Place berries in the centre of the dough, leave 2.5cm. Fold the edges over, fold in the sides. Brush edges with milk. Sprinkle sparingly with raw sugar.

    Bake for 25 minutes or until golden brown. Remove from the oven and allow to cool for 10 minutes before serving.

    Note: for a naughty option lay 50g of 80% dark chocolate on the base, before adding the berries. 😋
