Hot and Sweet Tomato Chilli Garlic Sauce

Chop tomatoes.Peel garlic.Pressure cook tomatoes,garlic,ginger paste,half crushed cloves and cinnamon,dry red chillies with salt and 1/4 th cup water upto 3 to 4 whistles.

Cool and grind the pulp.Strain the thick pulp discarding the seeds.

Pour the strained pulp in a pan and boil.Add sugar,vinegar,sodium benzoate,orange red food colour,black salt and red chilli powder and simmer for 15 to 20 minutes.Adjust chilli powder according to need.Half teaspoon chaat masala or spice mix may be added for a tangy taste,but optional. When the pulp has nearly thickened,check the consistency by dropping a spoon of sauce in a plate.It should not be runny.

Cool and store in a glass bottle and refrigerate. Serve tangy hot and sweet chilli garlic tomato sauce with any starter,appetizers, burgers,sandwiches,samosa, kababs,cutlets,french fries or any other snacks.
