Ingredients

24 - 25 pieces (using a 4 cm ice cream scoop)
  1. 100 gramssalted butter
  2. 80 gramspeanut butter
  3. 100 gramspowdered sugar
  4. 1/4 teaspoonsalt (if using unsalted butter, increase salt to 1/2 teaspoon)
  5. 3egg yolks
  6. 200 gramsall-purpose flour
  7. 1 teaspoonvanilla extract
  8. 1/3 cupchocolate chips (optional)
  9. Roasted peanuts for decoration, as desired

Cooking Instructions

    Let the salted butter sit at room temperature. Then, in a mixing bowl, combine the salted butter and peanut butter and beat until well mixed. Add the powdered sugar and beat until combined. Add the egg yolks and vanilla extract, and beat everything together again. Gradually add the sifted all-purpose flour and salt to the bowl. Gently fold the flour into the mixture, then use a mixer to combine everything again.

    Add the chocolate chips.

    Gently fold everything together.

    Use an ice cream scoop to portion the cookie dough (or use your hands or a spoon to shape as convenient). Place the dough on a baking sheet lined with parchment paper.

    Decorate the top of the cookies with roasted peanuts.

    Preheat the oven to 340°F (170°C) for 15 minutes. Then bake the cookies at 340°F (170°C) for 20 - 25 minutes, or until they reach the desired color and doneness (remember that ovens vary in size and heat, so you may need to adjust the temperature. Keep an eye on the color and doneness of the cookies).

    Once baked, remove from the oven and let them cool on a wire rack.
