A childhood treat, slightly enriched from my Mum's recipe, with flaked almonds

Heat butter, syrup and sugar in a pan until melted and dissolved. Turn off the heat.

Add the almonds and milled flax. Then add the almond essence, and finally the oats. It should be hard to mix once the oats are added, but everything should be combined nicely.
The milled flax seed can be swapped out with more oats. - 3
Roll out the pastry to 3-4mm. Cover your 30cm tray and prick the pastry with a fork.

Spoon the jam on top of the pastry and spread out evenly over the base

Spoon the outs mixture into the base and press gently so to form an even layer

Fold the edges of the pastry back over the mixture

Bake at the center of the oven at 190 degrees c or 170 fan for 20 to 30-minutes checking to see when the pastry and the topping starts Brown

Can be eaten cold, or enjoyed warm with some custard
