Steps

First of all cut brinjal and potato and tomato into small pieces.

Then in a pressure cooker add some oil and heat it. Add in mustard seeds, cumin seeds, turmeric, asafoetida then add in potatoes, tomatoes and brinjal

Lower the flame and mix everything well.

Then add in chilli powder, coriander powder, salt and then add in coriander.
Then let it cook for 2 whistle. - 5
Now open the pressure cooker after sometime. Then add in maggi masala and mix it well.
Now your brinjal sabji is ready to be served. Serve it with bajra rotla and salad and mohanthal and rice
