Add Seasoning A (1 star anise, 2 bay leaves, 2 teaspoons goji berries, 2 teaspoons rock sugar, 3/4 cup water) to a pot of boiling water. Simmer over low heat for 5 minutes, then turn off the heat and let cool.

Clean the shrimp: trim the whiskers and legs, and remove the intestinal vein. Bring a pot of water to a boil, add the shrimp, and cook just until they change color. Immediately transfer the shrimp to ice water to chill, then set aside.

Add Seasoning B (1/2 cup Shaoxing wine, 1 tablespoon rose wine, 1 tablespoon soy sauce, 1 tablespoon fish sauce, 1 tablespoon abalone sauce or chicken broth concentrate) to the cooled Seasoning A mixture. Add the chilled shrimp, then refrigerate and marinate for 12 hours.
