Brush 5 sheets of phyllo with olive oil and layer them in a medium baking pan. Evenly sprinkle half of the cheeses over the phyllo. Layer 3 more sheets on top, brushing each with olive oil, and sprinkle the remaining cheeses. Finish with the remaining phyllo sheets, brushing each with olive oil, and fold the edges inward.

In a bowl, whisk together the eggs, milk, and black pepper. Score the pie into pieces (do not cut all the way through to the bottom to keep the filling inside), then pour the egg mixture evenly over the pie. Let it sit for 15 minutes to absorb the liquid.

Bake in a preheated oven at 340°F (170°C) with the fan on, for about 45 minutes, or until the pie is golden brown. If it browns too quickly, cover with parchment paper.
