Chunky Tomato Soup

I still had a freezer draw full of last year's tomatoes which I grew myself as we are now coming into a new season I really need to use them up. So I made this healthy soup which we had with homemade soda bread.
I ran the frozen tomatoes under running hot water and easily peeled the skins away. Then I let them thaw slightly and roughly chopped them up before adding them to the saucepan.

Heat the olive oil over medium heat, add the onions and bay leaves. Fry for 1-3 minutes until soft. Add the garlic and fry for another minute.

Turn heat to high then add the tomatoes, water and add plenty of seasoning. Allow to cook on high for 10 minutes then reduce to a simmer and stew the tomatoes for 50-55 minutes or until soft and desired consistency has been reached. Serve with crusty bread.

For my picky toddler I blended it to a smooth soup and added a tablespoon of ketchup and sweetener.
