I often make potato mochi, so I tried this variation.

I often make potato mochi, so I tried this variation.

Finely chop or grate the onions and ginger. You will also use the juices.

Put the fresh okara and Step 1 in a bowl, add the shiro dashi and katakuriko, and stir.

Make large bite-sized balls, then flatten the tops a bit.

Heat the frying pan, add the olive oil, and cook both sides of the mochi. Once cooked, remove from the pan.

Add the soy sauce and mirin to the frying pan, bring to a boil, and coat the mochi from Step 4.
