Orange Marmalade

Orange marmalade is a jam like spread which is very different from jam in both taste and texture. It can be enjoyed with a toast bread. It can be even used in dishes requiring orange preserve.
To prepare marmalade orange juice, pulp and orange rind is used. Orange rind gives marmalade a very special taste which is slightly bitter and it cuts through the sweet taste of marmalade. I simply love this flavourful, sweet and little bitter spread. If you haven't tried it yet, it is a recipe you must try.

First of all wash oranges and pat them dry. Now take 5 oranges and peel them making sure that you peel only the orange part and not the white pith of the orange just underneath the skin as it is very bitter in taste. Now chop all the the orange peel into long strips.

Now cut the peeled oranges and take out the juice. After taking out the juice, collect the membrane and the seeds in a muslin cloth and squeeze it nicely to take out the remaining juice from it. Now keep that bag aside to use it later. It will be used as a pectin bag which will help to set the marmalade as it is full of natural pectin.

Now peel three remaining oranges and cut each segment with a sharp knife. Make sure that white pith and seeds are removed carefully. Squeeze out any remaining juice from the membrane.

Now add orange juice, orange segments and orange rind in a heavy bottom pot and weigh it so that we can add the equal amount of sugar into it. Make sure that you weigh the empty pot first and then add the other things to get the accurate measurement. Now add lemon juice and three cups of water into the pot along with the pectin bag. Cook it on medium heat until sugar is dissolved completely.

Now keep cooking it on low to medium heat and keep stirring in between. When the marmalade is about to be ready, you will see a lot of foam in the pot. This will take around two hours on low heat. Do not overcook the marmalade.

To check if marmalade is ready or not you can do a plate test. To do this, take a plate and pour a spoonful of marmalade and keep this plate in the refrigerator for 5 minutes then run your finger through it. If the mark is clear then it is done but if it is runny, then you still have to cook it for 5 to 10 minutes or until done. Here in the middle picture you can see that the mark is not clear and so I had to cook it for another 10 minutes.

Turn off the heat when marmalade is ready and let it become warm at room temperature. Then you can store it in sterilized glass jars and keep it in the refrigerator. It can be stored for a few months if used carefully. You have to use clean knife or a spoon every time you open the jar.

Orange marmalade can be served with toast bread or it can be even used in the dishes where orange preserve is required.
