Afghani Khattay Baingan

Brinjal , egg plant, aubergine or baingan... my love is same for this vegetable too.
I remember My amma used to write recipes of Kokab Khwaja in her diary in old days. This recipe is also inspired from her and I learnt from my Amma.
It’s my family’s favorite dish and with this dish, I turned my nephew’s taste. He didn’t like vegetables but after I got married, he started to like every dish what I cook and this one is the most favorite of his vegetable now. He always asked me Chachi woh baingan bana dain... 😄 baingan is in season, so why not to share with my Cookpad Family too😀

Cut all the baingan into thin round slices

Pour oil in wok and fry them. Just to turn them into golden brown. St stirring with spatula. I love to have just fried brinjals so half of it I ate while frying🙈🙈🙈.

Once it turned into golden brown, strain it and put it on kitchen towel for absorbing excess oil.

Take a same wok and add more oil. Cut thin slices of onion and put it into hot oil

While frying onions, on the other side cut tomatoes. Once the onions turn golden, add chopped tomatoes and fry more.

Add Red chili powder, turmeric powder, salt and coriander powder. Fry it on high flame so that oil separates itself.

Add a cup of yogurt and mix it well.

Once the masala has prepared, spread the brinjals on masala one by one. Brinjal should covered the whole masala

Once it is all fully covered the masala, pour whipped yogurt on the top. Sprinkle dew long whole chilies. Try to cover all brinjal and leave it for 10-15 mins on very low flame. After that if you will uncover the lid, you see the creamy yogurt textures turns into dry cream.

Dish out very carefully the whole thing is to dish. Do not break it otherwise whole baingan looks destroyed. Serve with Fluffy roti or chapati and enjoy your meals😋
