Matcha (green tea) panna cotta

I am a huge fan of Matcha flavoured desserts. We both enjoy eating panna cotta but I wanted to try and infuse some flavours into it such as for Matcha.
This is such a quick and easy dessert to put together and great for any occasion. With fresh berries like raspberry it adds a bit of tartness and blends perfectly with the matcha flavour.

Lightly grease 3-4 ramekins or small round containers and set aside.

Add the gelatine powder into a measuring jug. Then add water just enough to cover the gelatine. Let the gelatine sit there and bloom.

In a saucepan on low heat, add the cream along with the milk, sugar and sifted matcha powder.

Using a whisk stir occasionally, ensuring that the matcha powder has dissolved and is well incorporated. Bring it to a simmer but do not let the mixture boil.

Once the mixture is simmering turn off the heat. Add in vanilla extract (optional) and the bloomed gelatine powder. Gently stir everything until well incorporated and gelatine has fully dissolved.

Strain mixture through a small sieve into a measuring jug and pour mixture carefully into ramekins or small rounded containers. Or pour into mini jars. Cover and place in fridge for a few hours until set but for best results leave overnight.

When ready to serve, dip each ramekin into a bowl with hot water for 5 seconds. Tip ramekin up side down and onto a serving plate. Lightly dust the top of the panna cotta with extra matcha powder, add berries (optional) and enjoy.
