Ingredients

  1. About 2 1/2 cups cooked lentils with broth (about 400 grams)
  2. 4 tablespoonsall-purpose flour (about 30 grams)
  3. 2 tablespoonsgrated Parmesan cheese (about 15 grams)
  4. 4 tablespoonsolive oil or vegetable oil (about 60 ml)

Steps

  1. 1

    Cook your lentils as usual, using a broth made with carrot, celery, onion, and a few rosemary needles.

  2. 2

    Transfer the lentils to a tall mixing container. Add the oil, Parmesan, and flour, then blend everything together with an immersion blender.

  3. 3

    If the mixture is too thick, add a little water to make it creamy.

  4. 4

    Heat a nonstick skillet with a little oil. Pour in a ladleful of the mixture and cook for 3 to 4 minutes on each side, until well cooked and nicely crisped.

  5. 5

    Serve with cured meats, cheese, or just enjoy them on their own—they’re delicious!
