So I'm just now discovering the joys of chick peas. It is a very comforting food! I also cooked it with tahini to try and mimic the taste of hummus, one of my favourite snacks. Had it with good ol' ugali. #cereals

Ingredients

4 servings
  • 1 1/2 cupscooked chick peas
  • 3tomatoes chopped
  • 3onions chopped
  • Small ginger, minced
  • 1/2 teaspoonminced garlic
  • 1large bunch sukuma wiki, shredded
  • 2 tablespoonstomato sauce
  • 1 teaspooncumin powder
  • 1/2 teaspoonblack pepper
  • Pinchcayenne pepper
  • 1/2 teaspoondried oregano
  • Juice of half lemon
  • To taste salt
  • 1 tablespoontahini
  • 1/2 litrewater

Steps

  1. 1

    Put all ingredients except sukuma wiki and tahini in a pan and let cook until a very thick sauce, approximately 10 minutes.

  2. 2

    Add the sukuma wiki and cook only slightly so it doesn't overcook.

  3. 3

    When the sukuma wiki is ready, stir in the tahini and switch off heat.

  4. 4

    Serve with ugali.
