Idli is a South Indian cuisine. These are one of the healthiest protein packed and easily digestible Breakfast . It is soft and fluffy steamed cake made of fermented rice and lentils batter.
There are few tips and tricks to make soft and fluffy idli that I am sharing in this recipe.

Clean, wash rice, daal and fenugreek seeds soak it in enough water for 6-8 hours or overnight. Rice and daal both should be soaked seperately.Wash and Soak flattened rice for 1 hour before grinding.
In morning, strain the water from daal and reserve it for grinding. Also strain the water from rice and flattened rice. Grind all to smooth fluffy consistency using the reserved daa water. Pour the batter in container. - 2
The batter should have medium pouring consistency that coats the back of the spoon. Cover the batter lightly and keep it in a warm place to ferment for minimum 8 hours. After the batter is fermented well, it will rise to more than double in volume.

Add salt and gently swirl the batter, do not over mix it.
In pressure cooker or idli maker/steamer add some water and allow it to be boil.
Grease the idli mold and pour the portion of batter in each mold. Place the mold in the idli steamer or pressure cooker. Steam it for approx 15-20 minutes. Check the idlis with tooth pick, if it comes out clean, then yummy spongy idlis are ready. Take out the mold and let it rest for 3-4 minutes. Scoop out the idlis from the molds. - 4
Serve hot with Samber and coconut chutney.
