Banana Bread

Try this recipe if you have a pair of left over bananas - those which are overly ripe and the skins have slightly darkened. The quantity is enough for a 20x10x5 pan.

Ingredients

  1. 2overly ripe bananas, mashed
  2. 2 tbspbutter, melted
  3. 1/2 cupgranulated sugar
  4. 1egg, beaten
  5. 1 tspvanilla extract
  6. 3/4 cupall-purpose flour
  7. 2/4 tspbaking powder
  8. 2/4 tspbaking soda
  9. 2/4 tspcinnamon powder
  10. 1/4 tspsalt
  11. 1/3 cupdried cranberries
  12. 1/3 cupwalnuts

Cooking Instructions

    Preheat oven to 175 degrees.

    Mix banana, sugar, butter and egg until well combined. Add vanilla and mix.

    Add all the dry ingredients flour, baking powder, baking soda, cinnamon powder and salt. Mix until well combined. Do not over mix so that the bread is not too dense.

    Add the dried cranberries. Mix until thoroughly incorporated.

    Grease the pan and pour in the batter. Top with walnuts and baked for 35-45 minutes until top is golden brown.
