My Chickpea & Butternut squash Soup ❤

I bought this pack of frozen chickpea and carrot potato casserole. I added some Basil and blended tomatoes and Crushed Red Peppers, and Garlic then blended it all and it made an amazing soup, so tasty and filling. #Lunch

I bought this pack of frozen chickpea and carrot potato casserole. I added some Basil and blended tomatoes and Crushed Red Peppers, and Garlic then blended it all and it made an amazing soup, so tasty and filling. #Lunch

Fry the onions in a tsp oil with the Garlic for 1 minute

Add the casserole to a pan add the onions and all the rest of the ingredients except stock. Stir bring to the boil and simmer for 10 minutes.

Next add to the blender and blend until smooth then add the stock. Add back to the pan bring to the boil and serve.

Serve with a little fresh basil leaves to finish.
