Cooking Instructions

Chop the potatoes into bite-size pieces, soak in water, then steam (or microwave) until tender.

Mash the potatoes, mix in the basil pesto, and season with salt and pepper. Divide into 5 portions, then wrap each in plastic wrap to form a fritter.

Heat vegetable oil in a frying pan, then slowly grill both sides of the fritter cakes on low heat. Handle carefully when flipping over, since the batter is soft.
