Hearty Pork and Burdock Rice Bowl

I love rice bowl dishes. I love pork. So, I came up with my own version of a rice bowl that combines the two.
Just cut, stir-fry, and simmer.
If you coat it all with some egg, the taste will be milder. So it's rather salty itself!!
If you don't use any eggs, adjust the amount of soy sauce.

Cooking Instructions

Cut the burdock into long thin shavings and soak in water. You can easily do this with a vegetable peeler. You can also thinly slice it diagonally.

Cut the pork into bite-sized pieces.

Finely chop the ginger.

Heat a small amount of oil (not listed), and sauté Step 3 until fragrant. Sauté over low heat, being careful not to let it burn.

Turn the heat to medium and stir-fry the pork until the color changes. Once the color changes, add the burdock and stir-fry.

When everything is covered with the fat from the pork evenly, add all the seasoning ingredients.

Simmer while stirring occasionally until most of the liquid is gone. This way, the flavor will be strong.

Transfer on top of some rice in a rice bowl and it's done. Top with a poached or raw egg or with an egg yolk, whichever you prefer.
