Ingredients

  1. Beans
  2. Mixed vegetables (red bell pepper, scotch bonnet and onions)
  3. Salt
  4. Onga stew

Steps

    Soak and deskin blackeyed beans. Wash and set aside.

  2. 2

    Prepare mixed vegetables and add to beans.

  3. 3

    Grind or blend together till you have a smooth but very thick paste.

  4. 4

    Add salt and Onga (optional). Add little water if it is too thick. Beat the paste to incorporate air. This makes the Kosai fluffy.

  5. 5

    Heat vegetable oil in a deep pan. Add in few slices of onion for flavour.

  6. 6

    Scoop paste with a spoon or ladle into hot oil. Reduce heat. This will ensure even cooking.

  7. 7

    Turn balls when one side is fried.

  8. 8

    Transfer to a colander when both sides are fried.

  9. 9

    Served with prepared pepper (Yaji) and pap variant of choice.
