Dry roast sooji on a low flame for 5 minutes. Keep it aside.

Heat oil in a pan. Add mustard seeds, curry leaves, chana daal and urad daal to the hot oil and let it splutter.

Now add onion, green chilli and ginger and sauté well. Add tomatoes and cook for a minute or two. Add water and bring it to boil. Add salt as per taste.

Add sooji to the pan and stir continuously. Make sure there are no lumps. Cook for 5 minutes.

Add cashew nuts to Upma and mix well. Upma is ready to serve. Enjoy it with green chutney!
