There were not enough eggs and almond powder when I was making tart crust at home one day, so I mixed what I could to come close. While my usual dough recipe is better for a tart, I was impressed by the crispiness when I baked this version. It's delicious as cookies.

You don't have to knead. This is easy to make by just mixing.
I increased the amount of butter by a little because my usual recipe includes egg.
I used salted butter to increase the rich flavor of the egg.

Ingredients

40 servings
  • 200 gramsCake flour
  • 130 gramsSalted butter (You can also use margarine, but the dough might become too soft while baking depending on the margarine used.)
  • 100 gramsPowdered sugar (or granulated sugar)
  • 1(as needed)....i use 1/2 teaspoon of vanilla beans paste Any flavor material you like (optional)

Steps

    Sift cake flour and powdered sugar in each bowl. When making a chocolate flavor cookie, sift the cocoa powder too at this point.

    Whip the room temperature butter or microwaved butter until it has a cream-like consistency.

    If you softened the butter with a microwave and the butter became like this, put it in the refrigerator and try it again^^

    Add the powdered sugar from Step 1 to Step 2 and whip until it is a cream-like consistency. You can also use other kinds of sugar, but is will reduce the crispiness a little bit.

    If using vanilla beans past for the fragrance, add it after Step 4. I add 1/2 teaspoon of it for this ingredients amount. I highly recommend this.

    With this, you can not only have the vanilla flavor, but you can also see the grains of the beans when the cookies are ready. It's also easier to use than vanilla beans.

    Add the cake flour from Step 1 (add both cake flour and cocoa powder if making chocolate flavor cookies) to Step 4. Make sure not to knead and mix in a cutting motion.

    Gather Step 7 into one clump and wrap with a plastic wrap. Let it sit in the refrigerator for more than 30 minutes.

    The cookie is more delicious when it is a little crumbly. Press the dough together to clump them into one. The picture is for the chocolate flavor dough.

    Have fun making the dough into your favorite shapes. The picture is for icebox cookies. If making this, shape the dough before putting it into the freezer.

    When cutting out the cookies....roll out the dough with a rolling pin, and cut out to shape.

    When cutting out the cookies in a hot weather, roll out the dough on a plastic wrap and let the dough sit in the refrigerator for a while before cutting for easier cutter and cleaner shapes. Put the dough in the refrigerator if the dough becomes too soft.

    This picture is for a dough chilled in the refrigerator with egg white brushed on and spread sugar crystals around.

    The sugar crystals are big, so to let them stick to the outside of the cookies, I wrapped the dough and let it sit in the refrigerator (for about 15 minutes) to let the sugar crystal stick to the dough well. Then, cut the dough into about less than 1 cm thickness.

    After shaping, bake in a 355F/180C preheated oven for 15-20 minutes, and then they are ready.

    [Note] I've received feedback that some types of margarine will prevent the dough from baking properly.

    If you are using margarine and cutting out to shape the cookies] Make the dough to be a little thicker when cutting out, and use a smaller cookie cutter than you want the cookies to be when they are ready.
