Poached Egg with Bread, Smoked Salmon, and Wild Asparagus

Place a small pot of water on the stove. When it is about to boil, add salt and the washed asparagus, and let it boil for a few minutes.

Meanwhile, place another small pot of water on the stove for poaching the egg.

Crack the egg into a bowl. When the water is about to boil, create a whirlpool with a spoon or whisk and pour the egg into the center. Let it cook for a few minutes.

Prepare a plate with a slice of bread, and place the sliced salmon and cooked asparagus on top.

Gently scoop the egg with a spatula and place it on top of the bread. Season with salt and pepper.
