Ingredients

  1. 3 poundsOnions cut into 1/4inch slices
  2. 2 poundsLeeks (about 6) only the white and light green parts split lengthwise, wash well & chop
  3. 1/2 poundShallots cut 1/4 inch thick
  4. 1/2 stickbutter
  5. 1/4 cupheavy cream
  6. 1 cupcourse bread crumbs
  7. 1 cupsharp cheddar cheese
  8. 1/4 tsppaprika

Steps

  1. 1

    In a large heavy skillet cook onions, leeks and shallots in butter with salt and pepper to taste. Covered over medium heat, stirring occasionally for approx. 10 min

  2. 2

    Reduce heat to moderate-low, continue to stir occasionally 10-20 min until soft. Remove lid and cook over moderate heat for another 3-5 minutes until excess liquid is evaporated

  3. 3

    Transfer Onion mixture to a 2 quart shallow baking dish. Stir in heavy cream. Top with cheese then breadcrumbs. Dust with paperika

  4. 4

    Heat oven to 375o and cook for 20-30 minutes
